There is nothing revolutionary about raw food, eaten as it grows naturally. Our palate has been spoiled by too much salt and sugar, and many people cannot taste the delicious flavors of raw, unspoiled food. We can bring our taste back to balance and consequently our bodies and minds too, by eating healthier, fresher, more wholesome.
TIP #1. Shop only at the outer isles of the grocery store. This is where you find the healthiest foods, unpackaged, unprocessed, unlabeled! As you move towards the center you’ll find more potato chips, cookies, and more processed foods. Raw food can be very creative as we prepare our meals by soaking, blending, marinating, slicing and preparing with spices and herbs. Yes, it takes longer than throwing a prepared dinner in the oven, but it also gives us time to connect to our food, and grounds us in the present time. Can we make time for that?
This is a Corn & Parsley salad, with just a few ingredients you can get either in your garden or at the health food store.
TIP #2. If you have children, ask their help in making it, so they connect with the food and will enjoy eating it. Buy everything organic, or as much as you can afford. These portions make enough for 2 or 3 people.
fresh corn (2 cobs)
one bunch parsley or 2 cups chopped
one carrot, grated
one stalk of celery, chopped
small cipollini onion or 2 green onions
(optional) 1-2 tablespoons hemp seeds or soaked sunflower seeds
Use balsamic vinegar and olive oil, OR you can mix:
- 3/4 C coconut vinegar, or rice vinegar, or even lemon juice
3/4 C olive oil
handful fresh herbs such as dill, basil, cilantro, or some dried herbs
1 teas cumin powder
1 pinch cayenne (omit if for kids, too hot)
- sea salt to taste
Slice the corn off the cob w/a sharp knife into a bowl, add the chopped parsley, carrot and celery, plus onions if using. Toss well and then add the hemp or sunflower seeds if using. Add dressing before serving.
